If I was king of the world I would have a place in Perth and a place in Cairns. Perth (and surrounds) gets the most consistent and best wind in the summer, Cairns in the winter. The girls in both spots are pretty nice, though most of the ones in Cairns are tourists. Gold Coast has nice girls but the wind is less consistent, though the season is longer (a primarily summer season). Waves are better from about Fraser Island south along the east coast (nothing decent behind the Barrier Reef, and Perth isn't great for them either, though at least there are a few regional spots in WA with waves). As for beer, coming from South Africa, you're not going to like it. Probably about R14 (AUD3) for the cheapest glass of beer in an average pub, and I've paid over R30 in nicer places. With over 35000km of coastline on the mainland alone, there are all sorts of spots with all types of water. My two favourite places for kiting in Australia were:
West Coast - Safety Bay in Rockingham, about half an hour south of Perth. No waves there, but well located, a bit of flat water, a sandbar to jump over, and a friendly crowd. Consistent wind in the on season.
East Coast - Inskip point, just near Fraser Island. Almost unknown, but features 4 different types of water (open, flat, breaking on a bar, and breaking on the beach) close to each other. Wind there wasn't so consistent, and it is a more dangerous spot, but heaps of fun.
